Exotics - Tamarillos 
  
Description
Egg-shaped fruit with a pointed end. Smooth skin is glossy and ranges in colour from golden-yellow to scarlet. Golden apricot-coloured flesh contains seeds; flavour is somewhat bitter, tart and tomato-like. Tamarillo texture is meaty. Tamarillo's must be peeled and are best when cooked. 
 
Storage & Handling
Tamarillos should be stored between 7° - 10° C (45° - 50° F). Relative humidity - 85 to 95% Handle tamarillos with care to avoid bruising. Good quality tamarillos should be firm and heavy. Tamarillos are generally sold with stems attached. A ripe tamarillo should yield to gentle pressure and emit a fragrant aroma. Tamarillos are very low producers of ethylene and are not sensitive to ethylene exposure. Refrigerate for up to 1 week.

Usage Ideas
Tamarillos must be peeled and are often cooked and used as an ingredient in chutneys, relishes, and sauces. Tamarillos may also be sliced, baked, and served as an accompaniment to meat and poultry dishes.
